After a week of moderate use since the latest fixes were provided, the issues described on this page appears to be fixed.
If the issue, or any new issues ever resurface, this page will be reopened. But for now, the Insta360 folks have done a good job and I’m highly satisfied with the results.

Action Camera｜360° Camera - App Download
At random times while using the camera, the feed freezes completely. All software that’s using the camera appears frozen when it happens.
As per the latest update, the proper solution is to update both firmware and Link Controller to the latest versions.
If it ever happens again, another workaround is to reconnect the camera.
